The kitchen manager’s duties are similar to those of the general manager in that the assistant manager is responsible for working with the general manager to supervise the day-to-day operations of the pizzeria. The assistant manager should always be aware of the set prep levels and should keep the general manager informed of what is going on in the store.
The kitchen manager is expected to “back up” the general manager and do whatever is necessary to aid the general manager in achieving the goals set for the pizzeria. The assistant manager’s goal should to one day become a G.M. The assistant manager should also be able to lift 50 lbs. and have knowledge of service and food and beverage, generally involving at least three years of back-of-the-house operations and/or assistant management positions.
The assistant manager is directly responsible for all kitchen functions including food purchasing, preparation and maintenance of quality standards; sanitation and cleanliness; training of employees in methods of cooking, preparation, plate presentation, portion and cost control and sanitation and cleanliness.
REPORTS TO: General Manager
Responsibilities
Ensure that all food and products are consistently prepared and served according to Rosati’s Pizza formulas, portioning, cooking and serving standards.
Make employment and termination decisions including interviewing, hiring, evaluating and disciplining kitchen personnel as appropriate.
Provide orientation of company and department rules, policies and procedures and oversee training of new kitchen employees.
Fill in where needed to ensure customer service standards and efficient operations.
Prepare all required paperwork, including forms, reports and schedules in an organized and timely manner.
Ensure that all equipment is kept clean and in excellent working condition through personal inspection and by following the Rosati’s Pizza preventative maintenance programs.
When receiving products from vendors, check for order accuracy by comparing receivables against invoice
Ensure that all products are ordered according to predetermined product specifications and received in correct unit count and condition and deliveries are performed in accordance with the Rosati’s Pizza receiving policies and procedures.
Control food cost and usage by following proper requisition of products from storage areas, product storage procedures, standard recipes and waste control procedures
Oversee and ensure that Rosati’s Pizza policies on employee performance appraisals are followed and completed on a timely basis.
Schedule labor as required by anticipated business activity while ensuring that all positions are staffed when and as needed and labor cost objectives are met.
Be consistent in enforcement of store policies regarding personnel and administer prompt, fair, and consistent corrective action for any and all violations of store policies, rules, and procedures.
Oversee the training of kitchen personnel in safe operation of all kitchen equipment and utensils.
Responsible for training kitchen personnel in cleanliness and sanitation practices.
Responsible for maintaining appropriate cleaning schedules for kitchen floors, mats, walls, hoods, other equipment and food storage areas.
Check and maintain proper food holding and refrigeration temperature control points.
Qualifications
At least 6 months experience in a similar capacity.
Must be able to communicate clearly with managers and kitchen personnel and guests.
Be able to reach, bend, stoop and frequently lift up to 50 lbs.
Be able to work in a standing position for long periods of time (up to 9 hours).
The kitchen line cook prepares and cooks a variety of food products including meats, poultry, vegetables, sauces, stocks, breads and other food products using a variety of equipment and utensils according to the Daily Prep List.

Maintain a clean and sanitary work station area including tables, shelves, walls, char broilers, fryers, stove, convection oven, and refrigeration equipment.

Refer to Daily Prep List at the start of each shift for assigned duties.
Prepare a variety of meats, poultry, vegetables and other food items for cooking in broilers, ovens, grills, fryers and a variety of other kitchen equipment.
Ensure quality of menu selections.
Prep salad and entree ingredients daily.

Understand and comply consistently with our standard portion sizes, cooking methods, quality standards and kitchen rules, policies and procedures.
Portion food products prior to cooking according to standard portion sizes and recipe specifications.

They will maintain a high level of service, ensuring that all products served meet Rosati's Pizza specifications. The server will also assist in the cleanliness and organization of the pub and service areas. Previous experience in a sports pub is a plus.
